Hello! The cold snap made things a little challenging on the farm this week. The below freezing temperatures and gray days slow down the growth of the plants. But the shares are still packed with many delicious options!
In your share you will find:
- Winter Salad Mix
- Hakurei Turnips
- Brussels Sprouts
- Pea Shoots
Parsnips this week! Please view our website for a carrot and parsnip recipe from Martha Stewart. Martha and I have a long and complicated relationship that I will not go into right now, but her recipes are fabulous. I tried the roasted matchstick carrot and parsnip recipe out several weeks ago and it was devoured.
The pea shoots are gorgeous garnish, great in salads, sandwiches, soups, stir fry, or melted down into pasta dishes.
I have continued to roast the Brussel sprouts and hold onto them for salads for the rest of the week. So good!
The carrots seem to be getting sweeter in storage and I end up eating two or three or four as I try to cut them up for soups, salads, roasting, etc. My kids can also eat close to a pound in one sitting on some days.
The Hakurei turnips are from our greenhouse so that they still have tops. Although the turnips themselves are out of this world, the tops are also decadent and delicious. I roast them like kale chips sometimes. This week I put the beet tops from last week and turnip tops into a veggie lentil soup. They melted into a perfect soup for a cold gray day. The turnips are great whole, sliced into salads or roasted.
Enjoy the share. Next Saturday will be the last share of the year!
